Its vegan preparation includes mechanical processing without the use of chemical additives. By this, we primarily mean the non-industrial de-bittering of the Kalamata olives. Instead of using sodium hydroxide as in conventional food industry, we de-bitter them with salt water. Another factor of the vegan recipe is the absence of artificial flavors to influence the taste experience, as well as the addition of flavor enhancers. And thirdly, the olive paste is naturally colored black due to its natural pigments and does not require any artificial coloring from us.
