Oven-Roasted Stuffed Summer Vegetables

Gefülltes Sommergemüse aus dem Ofen

Stuffed vegetables are a quick dish that can be combined in different ways and always tastes delicious. Typical vegetables include: bell peppers, beef tomatoes, zucchini, and eggplants. This dish is usually vegan - but it can be refined with FETA or minced meat.

Ingredients

Vegetables for hollowing out:

  • Tomatoes,
  • Bell peppers
  • Zucchini
  • Eggplants

For the filling:

  • Carolina rice (1 tbsp per vegetable)
  • Carrots
  • Red pepper, parsley, oregano, salt, fresh mint, dill
  • The pulp of the respective hollowed-out vegetable
  • Spring onion and red onion
  • Aristos extra virgin olive oil
  • Potatoes (as a side dish as desired)

 

What you need

Knife, tablespoon, pan, oven, and baking sheet
 

Here's how it's done

  1. Hollow out the tomatoes, bell peppers, and eggplant, chop the remaining pulp into small pieces, and set aside.
  2. Preheat the oven to 180° convection.
  3. Chop the additional vegetables for the filling and the potatoes.
  4. Sauté the dried and fresh onions along with a splash of olive oil and the rice in a pan for about 15 minutes.
  5. Then add the pulp and the remaining vegetables, except for the potatoes, and sauté over low heat.
  6. Mix the potatoes in a bowl with salt, pepper, and oregano.
  7. Also add salt, pepper, oregano, parsley, and fresh mint to the pan.
  8. Place the hollowed-out vegetables on the baking sheet, fill them, and close them with their vegetable lids.
  9. Place the potatoes between the vegetables (they can be placed in such a way that they prevent the stuffed vegetables from tipping over).
  10. After one hour, remove the baking sheet from the oven and enjoy!

Mom's Tip

The mint and dill in this dish are typical Greek ingredients and give the whole thing a particularly fresh note. Of course, you can also add minced meat or FETA to the filling.
