Gemüse mit Olivenöl & Tomatensauce aus der Pfanne

Fried vegetables with tomato sauce is a simple dish that gets its Greek touch from the mint. In Greece, it is common to cook with fresh mint. Typical vegetables: eggplant, zucchini, and pointed peppers. Give it a try.

The ingredients

  • Vegetables of choice (we recommend bell pepper, eggplant, zucchini)
  • Flour
  • Olive oil
  • Dried and fresh onions
  • Fresh chopped tomatoes
  • Red bell pepper
  • 3 bay leaves
  • Garlic, salt, pepper, oregano, parsley, and fresh mint

You will need

Knife, pan, small bowl
 

Here's how it's done

  1. Salt and pepper the vegetables and coat them in flour.
  2. Then fry them in a pan with olive oil.
  3. Keep the vegetables warm in the oven (at approx. 50°C) on a plate.
  4. For the tomato sauce, lightly heat the olive oil and fry the onions in it.
  5. Add the tomatoes and bell pepper and season with garlic, salt, pepper, oregano, parsley, and fresh mint.
  6. Also add the bay leaves to the pan.
  7. Bring to a boil with a small splash of water.
  8. Let it cook until the liquid disappears.
  9. Pour the sauce over the vegetables and it's done.

Simply stir a generous amount of mint into the finished sauce and you have a traditional vegetarian dish.
If desired, you can also add feta cheese over the finished dish.

Mom's tip: It always tastes best with fresh mint. In addition, this dish is excellent in summer as both a side dish and a main course.
