Homemade Sourdough Trahana

Trahana is super quick to cook! If your little one is suddenly hungry, then Trahana is the quick, satisfying solution!

The classic Greek Trahana (also known as Traxanas / Trachanas) is made from sheep and goat yogurt, mixed with flour from Greek wheat. The mixture is kneaded and hand-rubbed through a fine sieve. The individual crumbs are naturally dried outdoors. The result is a delicious, light dish that can be prepared for breakfast, as a healthy lunch, or as a warming soup in the evening.

Trahana is one of the oldest durable foods in Greek history. Every Greek knows Trahana and can remember the enjoyable times when Trahana was served for lunch, dinner, as a snack in between, or even when suffering from a cold.

Trahana is particularly recommended for toddlers, as it contains many valuable nutrients from sheep's and goat's milk. In winter, the soup warms from the inside out and also contributes (with enough lemon juice) to recovery from colds.

Trahana as a traditional soup for children and everyone

Children love Trahana. Every Greek knows Trahana and can remember the enjoyable times when Trahana was served for lunch, dinner, or even when suffering from a cold, or as a snack in between.

For toddlers and young adults, Trahana is a particularly recommended dish, as it contains many valuable nutrients from sheep's and goat's milk. In winter or on cold summer nights, Trahana is one of the most digestible soups you can have. With enough lemon juice, Trahana also aids in recovery from colds. The warm soup warms you from the inside out and contributes to your recovery. Anyone who knows Trahana won't want to miss this soup!

Depending on the region in Greece, Trahana is prepared either with water, with or without feta cheese, or cooked with milk. Trahana is also one of the oldest durable foods in Greek history.

How is Trahana prepared?

Trahana or Tarhana is known throughout Greece. Each region has its own way of preparing or refining Trahana.

In the Peloponnese, specifically in Messini, they grate FETA cheese into the Trahana soup. In the north, they only use bread or cook the soup in milk instead of broth and tomato sauce. Just be creative and try it out. Trahana always tastes great!

The most common options known to us are:

  • Boiled in milk
  • In tomato sauce with and without milk
  • Or classically with clear broth

One way to prepare it is to sauté a few onions, grate tomatoes into a pot, boil water, salt (season) and add half a cup of Trahana to the pot. Let it simmer for 10 minutes, stirring occasionally, as the Trahana may boil over (tip: if the Trahana swells up, you can blow on it to prevent it from boiling over). Serve with Feta.

CAUTION

Constant stirring is necessary as the Trahana may boil over.
