The classic Greek Trahana (also known as Traxanas / Trachanas) is made from sheep and goat yogurt, mixed with flour from Greek wheat. The mixture is kneaded and hand-rubbed through a fine sieve. The individual crumbs are naturally dried outdoors. The result is a delicious, light dish that can be prepared for breakfast, as a healthy lunch, or as a warming soup in the evening.
