In Greek cuisine, there are various terms that mean the same thing. For example, black olive paste, also known as tapenade, which you can buy under this name at ARISTOS, is nothing more than a smooth paste made from seasoned and ground Kalamata olives. It can be used as a classic Greek spread or as a hearty dip for vegetables, meat, and fish. You can also add some black olive paste to your leaf or tomato salad instead of whole Kalamata olives – it's a refreshing change. The olives for our black olive paste come mostly from our home village of Trikorfo and the neighboring region of Laconia. Messenia and Laconia are the largest cultivation regions for Kalamata olives in Greece. Our black olive paste is also produced and bottled directly on site in Trikorfo – but you can conveniently buy it in our online shop. Its vegan preparation includes mechanical processing without the use of chemical additives. By this, we primarily mean the non-industrial de-bittering of the Kalamata olives. Instead of using sodium hydroxide as in conventional food industry, we de-bitter them with salt water. Another factor of the vegan recipe is the absence of artificial flavors to influence the taste experience, as well as the addition of flavor enhancers. And thirdly, the olive paste is naturally colored black due to its natural pigments and does not require any artificial coloring from us. In short: with ARISTOS, you can enjoy original Greek spread as it traditionally should taste.

Of course, we're happy if you buy the ready-made tapenade from us – but if you want to make it yourself, you only need a handful of ingredients, which you can ideally also order from our organic cultivation. These are primarily our black Kalamata olives, which you have to pit by hand, a little thyme, oregano, salt, a clove of garlic, ground pepper, and some olive oil. As a tool, you only need a mixer. Gradually add all ingredients to the mixer, grind everything finely, and whisk all ingredients together – and your homemade black tapenade is ready.

A little tip: The more olive oil you add to the homemade olive paste, the more spreadable your tapenade will be. And another tip regarding its shelf life – even if you buy it here at ARISTOS: Generally, the olive paste stays fresh in the refrigerator for 4–6 weeks after opening. If you want to extend this period to up to 3 months, you only need to add a little olive oil and mix it with the paste.
